After trimming some of the chicken when I made Chicken Kiev for my birthday last weekend (September 26) I put the pieces aside for use later. Well, later was for lunch the next day.
With out getting into a detailed recipe I will simply just let you know all that I did. As the title says, this was just something quick and simply put together.
Chicken and Pasta – A Simple Lunch

I used ingredients that I had laying around and of course the left-over chicken which I cut into about 1 inch pierces. I cooked the chicken in a small frying pan with a little oil over medium heat. I lightly seasoned the chicken pieces with a little salt and pepper. After, I put that on the side in a clean bowl.
Afterwards I boiled some water to make tri-color vegetable spiral pasta in a medium sized saucepan. As that was cooking I continued with the rest while keeping my eyes on the pasta cooking.
I finely chopped some onions and sauteed them in the same small frying pan with about a tablespoon of butter. Halfway I added a 1/2 clove of minced garlic When the onions and garlic were sauteed I then added about another 2 tablespoons of butter, added some chopped parsley, the chicken and about 2 tablespoons of flour.
I cooked that until the flour and butter, with the combined ingredients, made a thicken gravy – almost like a roux. I only added a little water to the mixture to thin the roux and make it more like a chicken sauce. Turned off the heat to let all the flavors “marry”. Once everything was ready I drained the pasta, put that on a plate and topped the pasta with the chicken mixture.
The whole process took less than 15 mins so I was able to sit down with some iced tea to enjoy a simple and quickly made lunch. You can add what ever spices you like.
